Ingredients
1 cup soft Medjool dates, pitted
½ cup tahini (or freshly ground sesame butter)
½ cup finely ground almonds or walnuts
½ tsp cinnamon
¼ tsp cardamom
Pinch of ginger powder or nutmeg
Pinch of sea salt
Optional: 1 tsp raw honey or maple syrup, to taste
Optional: shredded coconut or sesame seeds for rolling
instructions
In a food processor, blend dates until they form a soft paste.
Add tahini, nuts, spices, and salt. Pulse until well combined and slightly sticky.
Taste and adjust sweetness or spice as desired.
Roll into small balls and, if you like, coat in coconut or sesame seeds.
Chill briefly to set—or enjoy right away.
